Sweet Potato Sausage Soup

Soup Recipe #5

This is an amazingly delicious soup — so easy to make, it cooks in an hour.  I love the interesting combination of flavors, and the use of V-8 juice as the base is the secret to the flavor, I think, plus the kielbsa and cabbage.  It’s the kind of soup that you take to your neighbor and then she wants the recipe too.  You have to try it to see how good it really is!


1 lb. kielbasa or smoked sausage, sliced
2 medium sweet potatoes, cut into chunks
1 cup coarsely chopped cabbage
1/2 green pepper, chopped
1 cup celery, chopped
1 cup chopped onion
2 (14.5 oz cans diced tomatoes
2 cans blackeyed peas, undrained
2 cans beef broth
2 1/2 cups V-8 (spicy works too) juice
1/2 tsp. black pepper


Here’s the best part:  just put everything in a big pot and simmer for an hour. (You could add a little rice or pasta too.)
