I’ve been looking through my recipe book – the one that I’ve written myself by recording all of our favorite recipes over the years – checking to see what little gems I’ve forgotten. Made them once or twice then moved on. Often the gems are “little” recipes, the kind that are quick and uncomplicated but delicious. Yesterday I wrote about the pepper and provolone appetizer which definitely fits in this category. Another one I had forgotten is Salted Caramel Almond Brittle!
Everybody needs a little candy to sweeten the day, and this simple, delicious recipe is just the best — you’ll be really happy if you make it. Trust me. You’ll eat it all before anyone can get near it.
Salted Caramel Almond Brittle
1 cup whole blanched almonds
1/2 cup sugar
2 tablespoons butter
1/2 tsp. vanilla
3/4 tsp. sea salt
Heat almonds, sugar and butter in heavy skillet over medium heat, stirring constantly, till almonds are toasted and sugar is golden brown, about 15 minutes. Stir in vanilla.
Spread nuts on a sheet of aluminum foil sprayed with cooking spray; sprinkle immediately with salt. Cool; break into 2-3 nut clusters.
