Maple Pepper Pecans

I found this recipe last year and it immediately became a favorite.  It’s  perfect for the holidays, a change from the usual cinnamon-sugar pecans that many of us make.

Maple Pepper Pecans

(325 degree oven – 15-20 min.)

l tbsp. egg white, lightly beaten
1/4 cup pure maple syrup
l tsp. kosher salt
2 Tbsp. butter, melted and slightly cooled
2 tsp. coarsely ground black pepper
2 cups pecan halves
Optional:  1-2 tsp. allspice if you want more flavor and heat

Whisk egg white with salt until very frothy.  Add maple syrup, butter and pepper and continue whisking.  Stir in pecans.  Spread on rimmed cookie sheet and bake, stirring a could of times.  They are finished when glaze is absorbed and they’re darker in color.  Cool on a rack, stir with a spatula and continue to cool until crisp — about 10 min. in all.
